Among the many healthy greens we cultivate in our resort's organic garden is a familiar favorite: spinach. While you might be more accustomed to its Western counterparts, the spinach (bayam) grown here is a staple in Balinese and Indonesian households. It’s a versatile and humble leafy green that adds a fresh, earthy flavor to countless dishes. While Ipomoea aquatica (water spinach) is more commonly found in local cuisine, true spinach (Spinacia oleracea) is also grown in Bali's cooler highland regions, bringing its well-known nutritional benefits to the tropical island.
This simple vegetable is a nutritional powerhouse. Spinach is celebrated for being an excellent source of iron, a mineral essential for energy and blood health. It is also packed with Vitamin K, which is vital for bone health, and a host of antioxidants that help fight inflammation and support the immune system.
